I like cheddar and mozzarella...though I think they're the only ones I've tried. Except red Leicester but that was horrible...

I like a variety, but nothing too smelly and it can't have the whole mouldy appearence thing going on. Fresh parmesan's a winner for me, though. Not the American parmesan, though, that tastes odd. In fact all American cheese tastes really sweet.
