In case anybody else has this problem with Ultimate Team or anything else, I found a solution on another forum.
Had nothing to do with routers or port forwarding or anything like that. Looks like a setting some place gets corrupted and needs to be reset.
To fix, exit the game, go to the dashboard, sign-off xbox live and go to your system settings. Change the date to 11/15/05. After that is saved, log into Xbox Live and start FIFA backup. You should be all set.
And the date will automatically reupdate itself.
