Scoring from crosses is simple enough, takes a bit of luck. I usually have my Crossing tactics set to 75 to get players in the box, and from there I'll hold LB while double tapping X and moving the left stick in the direction I want letting the power fill up to about 75%. I'd say about 50% of the time I get my head on the ball and 25% the ball goes in, but I'm not really a crossing person. Also I've found semi-assisted crossing is the best.

Defending from the wing requires a little more wits the holding your sprint button and pressing A. Run down the wing alongside the winger, don't go for the lunge unless you know for a fact you can get the tackle in. Usually right before they reach the corner they'll pull the ball back so they can get open so you'll want to slow down a little bit and start to jockey the winger. Once you start to jockey (you use LT to jockey) press A, and if he does try to cross I'd say about 75% of the time you'll block it.

Also another tip is pressing X once is a high cross, pressing X twice is a low cross, and pressing X three times is a triple cross which is useful on the counterattack where there's maybe one defender in the box, you're on the wing, and you have an attacker making the run to goal.
