Holding the Left Trigger makes u control the ball much closer so defenders cant easily steal it from u after a Trap, would recommend doing it except when chesting the ball, sometimes the ball just bounces yards away when using ur chest and holding Left Trigger, not sure if this is just random.
2. Jostling while running is done automatically too, all depends on the players strength stats i believe, so while running and theres a defender beside you, u will jostle and i havent found any way of stopping them unless u have a stronger player. Or using the right trigger to run away from the defender if ur player is fast enough.
3. The shield ball technique works great but it requires some practise and you do need some time for ur player to get into the shielding position, now u cant just hold it and keep the ball for ever but you can hold the ball for a second or two longer while using it and right when the defender is about to tackle you u turn ur player to the opposite direction of the defender and ur clear for a run. Try it on Amatuer difficulty and u'll know wat i mean.
Hope this helps.

Well I do appreciate your feedback. Let me comment on it. In the PDF the way the section on trapping was written it made it seem like a proactive thing, not an automatic one. I've noticed the chesting + left trigger the direction that the chest trap takes. If you are holding left then the player will try and bounce it off his chest that way. I guess that's supposed to be a feature like one touch passing. But really all it does is make me wonder about another question.
4. How do you trap the ball gently on your chest and bring it under control at your feet?
I find even if I give plenty of time for my player to set up his "shield ball" move the defender usually just runs in and knocks me off my feet. Playing on amateur isn't a great way to perfect that skill (imho) because the level of skill portrayed therein is nothing like a ranked match online (which is what I'm interested in).
