Re GK - Shoot a touch earlier than you might normally, and shoot/aim low (minute 'tap' on shoot button). Keepers struggle to get down, and you can score quite often even without hitting the corners of the net.
Re Extra Touch - When through on goal, if you have the time (plan early for it), knock the ball on with the right analogue stick and immediately press to shoot. I don't remember ever having someone take an extra touch after I've 'knocked-on'.
Bare in mind, I only play on WC level... the above might be useless for those on Legendary. If I ever learn how to defend against the 'cross', consistently, I might move up
