Its not rocket science.

You add velocity to a given object say a football and depending on the velocity and aerodynamics of said object you will see not only does the object over come gravity it also will rise, dip and swerve.

As I said the ball physics are pretty good in fifa, havent played pro evo but the only differences will be in spin/dip/rise factor and this will be down to the arbitrary weight at which the ball is given and the way in which velocity is applied (how its kicked, the angle of the kick, the spin amount) etc.
