People hacking in your PS3? When you are playing a game? And then? It doesn't work like that. The PS3 uses certain ports to communicate with the internet and only those ports are used to connect. Using your thinking: hackers could enter your PS3 anyway, even without DMZ / portforwarding, which is not the case.
DMZ just puts your PS3 in a place where it can freely connect with the internet without any interference of a firewall or need for UPnP. If your not using a firewall on your router, or you have UPnP on it, there is no reason why you would yield different results when using DMZ. Remember: those things are only there to bypass the a firewall.
