So many times I could run over someone and see them slide through the middle of my vehicle like a knife through butter and nothing would happen. Also smashing into someone standing against a wall, doesn't kill them even if the wall shutters as a result.

A complete turn around from BF2142. You're right about BF:BC vehicle impact detection to enemy soldiers is way too weak. I'll often use the tank as a lawnmower in the large maps. Clearing out hiding places for the Attacker's approach and our Recon can pick them off. Sometimes there are enemies squatting in the bushes I mow down and don't always get the road kill.
Making a crater in the field by shooting mines with an RPG then squatting in it for cover, I've had an enemy tank go right over the top of me.

Making trenches/crater near buildings can be very interesting and unexpected cover positions too. The mines may no longer damage the gold crate, but they can destroy them metal walls well.
