I've never installed CEP over a live version of the game, but I would take the following approach to get rid of it altogether.
- uninstall the game using Windows Add/Remove programs
- delete the 'FIFA 08' folder from within the 'Program Files' structure (don't move to the recycle bin, delete by holding down the shift key when selecting the Delete context menu option or pressing the Del key)
- delete the 'FIFA 08' folder from within your 'My Documents' structure (again delete, not recycle bin)
- if you are feeling paranoid then use REGEDIT to remove all mention of 'FIFA 08' from the registry (WARNING take a backup of the registry first, it is quite possible to shag your Windows installation by (mis)using the registry editor)
- reinstall the game from the original media
