Do these friends of yours own the game? Cause it sounds like they just come over to your house and play it once. Of course you'll beat someone who doesn't know the controls and everything.
But have you ever played online in FIFA08? You can know nothing any football but as long as you know the controls (x to pass, square to cross, double tap square for low cross, etc.) you can beat someone. All you need to do is take C. Ronaldo down the wing and pass it in the box. Your defenders don't respond, the GK goes into no man's land and they score. Even if you know how to defend it, 1/20 cutbacks will still make it into the goal.
