You're not going to find a bundle with Rock Band in - it's too expensive and too niche. Keep an eye on
HotUKDeals - Deals - All - they frequently have links to good deals on 360 hardware/software. Also, consider buying an Arcade unit and re-using the hard drive and other peripherals from your existing 360. Lets you upgrade to the latest model of hardware at a comparatively low price.
