I don't know if anyone else has noticed, but playing 5v5 on the PS3 for me at least, the opposing captain is more likely to pick a similarly rated team then when playing single player games. Although this is probably because it isn't ranked.
Unfortunately, people will use the best team(s) in the game in single player online as it's by far the easiest way to give you a chance of winning.
